Harvest Chicken Salad

Ingredients
• Chicken Drumstick, 10 drumstick, bone and skin removed • Mayonnaise, regular, 6 tbsp • Apple, Gala (medium), 1 serving • Bosc Pear {medium}, 1 serving • Jalepeno Pepper Juice, 1 serving • Celery, raw, 1 stalk, large (11"-12" long) • Romaine lettuce torn into pieces, 2 cup • Cucumber, 1/4 inch slice, 24 pieces • Salt, 1 tsp • Pepper, black, 1 tsp • Tomato, grape 24 • Feta Cheese, 1 cup crumbled
Directions
Bring chicken legs to a boil in a large pot, the reduce heat and simmer for 1 1/2 hours. Season the water with salt and pepper.

When chicken has cooled, remove skin and throw away. Then remove all meat from the bone and put in a large salad bowl; add mayo, salt & pepper (to taste). Add chopped apple, pear, celery. When ready to serve, put torn romaine lettuce on plate and about a cup of the chicken salad. Add 3 tomatoes and 3 cucumers to the salad and a couple of tablespoons of feta cheese.
