Green Curry Chicken Salad

-2 Chicken Breasts-1/2 cup Thai Green Curry Simmer Sauce (Trader Joes)-3/4 cup Fat Free Mayo-4 tbsp Yellow Mustard-1/2 cup Green Onions-1/2 cup Red Onion-2 Large Pickles-3 Hard Boiled Egg Whites-Pepper to taste
-Cook frozen chicken breasts in a skillet and then slice into small chunks. Then add the simmer sauce and cook until the sauce and chicken are equally hot.
-Prep the veggies while cooking the chicken. Slice the onions, pickles and egg whites into small chunks and throw together into Tupperware.
-Add the mayo and mustard to the veggie/egg mixture and stir. Add the pepper as well.
-Throw the chicken into the mixture and toss.
-Refrigerate until thoroughly cold.
Serving Size: You get 5 servings out of the batch.
