Cabbage and Veg Soup

Ingredients
6 cups shredded cabbage1/2 cup chopped bell pepper (I like using red and green for colour)1 1/2 cups chopped celery1 1/2 cups chopped onions 2 cups chopped or sliced carrots2 cups canned tomatoes with liquid4 boullion cubes (any flavour) + 4 cups waterOR4 cups low sodium broth (any flavour)Any assorted vegetables of your choice (I like corn and cauliflower)
Directions
Simmer all of the ingredients together until the vegetables are tender. Enjoy!
