Oriental Barley Pilaf

Ingredients
1-1/3 c. chicken broth2/3 c. barley1 t. olive oil1/2 c. thinly sliced carrots1/2 c. thinly sliced celery1 clove minced garlic1/2 c. sliced mushrooms1/4 c. sliced green onions1-2 T. soy sauce
Directions
In a med. saucepan, bring broth to a boil. Stir in barley. Reduce heat. Cover and simmer 10-12 min or until tender. In large skillet heat oil. Cook carrots, celery and garlic over med-high heat 2-3 min. Add mushrooms and green onions and cont. cooking 1 min. Add cooked barley and soy sauce. Continue cooking over med. heat until heated through.

** could substitute brown rice if desired
