Apricot Coconut Two Bite Muffins

Ingredients
1/4 cup milk powder (optional)2 cups unbleached white flour1 cup coconut1 teaspoon baking powder1 teaspoon baking soda1/4 teaspoon salt1 teaspoon cinnamon1 1/2 cups dried apricots, plumped and quartered1/2 cup butter or oil3/4 cup white sugar1/4 cup brown sugar1 egg1/2 cup citrus juice1 tablespoon white sugar for topping (optional)
Directions
Soak apricots in boiling water about 10 minutes until soft (plumped). Meanwhile, mix together dry ingredients. In separate bowl, cream butter and sugars. Add egg. Mix well. Add apricots, citrus juice and vanilla. Stir wet ingredients into dry until moistened. Drop teaspoonsful into greased two bite muffin pan. Sprinkle pinch of sugar on top of each for crispness. Bake at 350° F, 20 to 25 minutes. Let cool 5 minutes and turn out of pan to cool.
