Vegetarian Chickpea Sandwich Filling

Ingredients
15.5oz can Chickpeas (drained and rinsed)1 cup chopped carrots 1 cup chopped celery1 shallot chopped finely1/2 cup Fage 2% plain greek yogurt4 tbsp. mayo2 tbsp. tahini1 tsp lemon juice
Directions
drain and rinse the chickpeas, place in a bowl, and mash with a fork
chop the carrots, celery, and shallot finely -- add to the mashed chickpeas and set aside
in a separate bowl mix the yogurt, mayo, tahini, and lemon juice
add the yogurt mixture to the chickpea mixture and make sure it is distributed evenly
use it like you would tuna or chicken salad

Serving Size: makes enough for about 5 sandwiches
