Kind-of-a chicken gumbo

Ingredients
2 cups low-sodium chicken broth2 teaspoons chicken bouillon2 ounces onion4 ounces carrot8 ounces okra3 sun-dried tomato halves1 tablespoon ketchup8 ounces cooked chicken4 tablespoons cilantro1 cup instant brown rice2 cups water1/2 cup cooking wine8 ounces frozen spinach
Directions
1.Cook carrots, tomato pieces, okra, ketchup, bouillon, cooking wine and onion in broth until onions are cooked. About 30 minutes
2.Add spinach. Cook a few more minutes
3.Add chicken and rice. Stir to mike and let sit until rice soaks up liquid.
4.Place cilantro in each of 4 containers and add gumbo in equal portions
5.Makes about 4 2 cup servings.
