2 Stalks celery, chopped1 onion, chopped4 cloves of garlic, pressed2 Tbsp olive oil1 cup TVP1 cup water15 oz can of black beans15 oz can of kidney beans28 oz can of chopped tomatoes8 oz can of tomato sauce2 Tbsp chili powder1 tsp ground cumin1 tsp oregano1/2 tsp salt1/4 fresh parsley, snipped2 bay leaves
Saute celery, onion, and garlic with 2 tbsp olive oil until soft. Mix remaining ingredients in dutch oven or stone wear covered dish and add sautéed items. Cook in a 250 degree oven for at least two hours to blend flavors.
