Bison/Hamburger Soup

Ingredients
1lb ground bison (beef can be used, but has a higher fat and calorie content)¾c diced onions2tsp minced garlic½c diced celery1c frozen mixed vegetables½c chopped mushrooms2 – 16oz cans of stewed tomatoes (you can use your favourite flavored stewed tomatoes if you prefer)1c diced potatoes2c beef broth1c water½c diced parsley root (optional)2tsp basil2tsp cilantro
Directions

Brown the ground bison, onions & minced garlic.
Once browned, drain and add to your slow cooker. Add all other ingredients. Spice to taste. Cook in slow cooker on high for ½ an hour. Reduce heat and cook on low for 3-4 hrs stirring occasionally.
