Healthy Honey Oatmeal Cookies

3 Tbs Butter, room temperature1/4 cup Splenda Brown Sugar Blend1/4 cup Honey1 Egg, large1 Tbs Water1 Tsp Vanilla extract1/2 Cup whole wheat flour1/2 Tsp salt1/4 Tsp baking soda1 Cup rolled oats1/2 Cup Craisins1/2 Cup Chopped pecans
Preheat oven to 350 degrees F. Spray a cookie sheet with nonstick cooking spray.
Using a mixer with the paddle attachment, mix together the butter, brown sugar, honey, egg, vanilla, and water thoroughly.
Add dry ingredients then stir in the oats and mix. Mix in the Craisins and pecans.
Drop by heaping teaspoonfuls (or use cookie dough scoop for uniformity) onto cookie sheet. Bake 12-15 minutes or until set and lightly browned. (These cookies don't spread out so I flatten them with the back of a spatula after removing from the oven). Let cool on a wire rack. Makes about 16 cookies.
