Chicken &Lemon Polpettine (Kevin Jacobs,A Garden for the house)

3 large chicken breast halves 1.5 LB ground(I ground my own)1 cup panko1 Lemon ,zested and juiced.1 Tsp kosher salt1/4 cup fresh chopped parsley3 Tbsp fresh Thyme or 1 Tbsp dried.2 Tbsp grated parmesan cheese A small amount of flour for dusting the polpettines.for frying : use 2 Tbsp olive oil 3 Tbsp unsalted butter or just olive oil .
In a lagre bowl mix all ingredients exept oil and butter. Pour some flour on a baking sheet,form tablespoon size balls, flatten slightly and coat on flour.
Heat oil and butter in skillet fry until golden brown 4-5 minutes on each side. serve immediately.
NOTE: polpettines are not served with a tomato sauce or gravy, rather salad greens and cannellini beans
I made a Spark recipe ,Broccoli and Cauliflower casserole.
Serving Size: makes 30 polpettines ,serves 5 at 6 each
