Gluten Free Carrot Pineapple Bread

Ingredients
DRY TEAM3 cups gluten free flour (starch based)2 cups sugar2 tsp. baking powder2 tsp. baking soda2 tsp. ground cinnamon1/2 tsp. salt1 1/2 tsp. guar gumWET TEAM4 eggs, beaten1 cup unsweetened applesauce1/3 cup oil1 tsp. vanilla2 cups shredded carrot1 cup crushed pineapple
Directions
1) Preheat oven to 350 degrees F. Grease two 9X5 loaf pans.

2) Sift DRY TEAM ingredients in a large bowl.

3) In a small bowl, combine WET TEAM ingredients.

4) Stir WET TEAM into DRY TEAM, just until moistened. Do not over stir.

5) Pour batter into greased pans. Bake for 50-55 minutes, or until toothpick inserted into the center comes out clean.
