Ingredients
1 Tbs. pre ground flax seeds1 c blueberries1 c quick oats1 c Almond Milk, Blue Diamond Original Unsweetened3/4 c whole wheat flour1/4 c Almond meal flour (Bob's Red Mill)3 tsp baking powder1/2 tsp cinnamon1/2 tsp salt2 whole eggs1/4 c unsweetened applesauce1/2 c Stevia in the Raw cup for cup sweetener2 tbs Molasses1 tsp vanilla extract
Directions
Preheat oven to 375°F. Spray muffin pans with nonstick spray containing flour (or what you like to use). Wash and dry the blueberries. In a small bowl, combine the oats, vanilla and almond milk, and let stand at room temperature for five minutes. In a medium bowl, combine the flours, baking powder, cinnamon, and salt; mix with a fork to blend and set aside. In a large bowl and using a hand mixer, beat the eggs, applesauce, stevia, and molasses at medium speed for 5 minutes, the mixture should be slightly foamy. Blend in the oat-almond milk mixture. Stir in the flour mixture only to combine, try not to overwork the mixture. Fold in the blueberries. Fill muffin cups 3/4 full and top with a sprinkle of flax seed. Bake 15 minutes or until a toothpick inserted into the center comes out clean.
