Sauteed Artichoke Hearts Amandine

Ingredients
2 tablespoons extra virgin olive oilone pound artichoke hearts2 tablespoons ground almonds1 shallot, mincedfreshly ground nutmeg, to taste
Directions
Heat oil in skillet over medium
Toss artichoke hearts with almond flour to coat
Saute in oil for three to five minutes, stirring occasionally
Add shallot and cook one minute longer, until browned
Sprinkle with nutmeg, to taste
Top with parsley
