Vegetarian Barley Vegetable Soup

Ingredients
2 tbsp Olive Oil1 medium (2-1/2" dia) raw Onion8 cup Vegetable Broth, 8 cup .75 cup raw Pearled Barley1.5 cup chopped raw Carrots 1.5 cup frozen chopped spinach1.25 cup Frozen Cut Green Beans 1.25 cup Peas, frozen2-14oz cans of Diced Tomatoes1 tsp Italian Seasoning
Directions
In a large soup or stock pot, sautee garlic and onions in olive oil for 4 to 5 minutes, until just barely soft. Carefully add vegetable broth and remaining ingredients and bring to a slow simmer.
Allow to cook until barley is soft, about 30 minutes, preferably longer. Adjust seasonings as desired.
