1 lb white button mushrooms, quartered3 Tbsp EVOO2 Tbsp lemon juice2 Tbsp melted unsalted butter2 cloves chopped garlic1/2 tsp salt1 Tbsp parsley1/2 Tbsp Thymeblack pepper to taste
Preheat oven at 375 degrees. Wipe down mushrooms, then quarter. In separate bowl, mix the EVOO, lemon juice, and melted butter with the chopped garlic, and toss with the mushrooms. Add all the remaining seasonings and continue to toss. Transfer mushrooms to a non-stick baking sheet and heat in oven for 15 minutes. Stir mushrooms halfway through. Serve immediately.
