Tofu Cheesecake Pie

Ingredients
400 grams silken tofu1/4 lemon juice (juice of one lemon)2 eggs1/2 cup sugar1tsp vanillazest of one lemon9" graham cracker pie crust
Directions
Preheat oven to 325 degrees. In a food processor or blender combine tofu, egg and lemon juice and blend until very creamy and smooth. Pour into a bowl and add the sugar, vanilla extract and the zest of one lemon. Mix thoroughly and pour into a cool 9" graham cracker pie crust. Bake for approximately 45 minutes or until it seems set in the centre when jiggled. Serve plain, with some fresh fruit or a little jam.
