Matzo Kugel

3 matzos, in pieces3 eggs, separated; whites beaten until stiffscant 1/2 cup honey1/4 t. each salt and cinnamonPinch nutmeg3 Granny Smith apples, peeled and choppedRind of one orangeRind of one lemon1/4 c. chopped toasted pecans3 tbsp. olive oil
Briefly soak the matzos in water until thoroughly wetted and pliable, then drain them thoroughly. Beat together the egg yolks, honey, and seasonings, including rinds. Stir in the matzos. Gently fold in the egg whites.
Layer the matzo mixture and the apples in a well-greased 8" square pan like a lasagna. Sprinkle with the chopped nuts and dot with butter (unless you need it parve -- butter not included in calculation because we always have it parve).
Bake at 350 for 40 minutes. If not sufficiently browned, broil for 2 minutes on HIGH.
