Di;s Breakfast Sandwich

Ingredients
1 egg2 slices Canadian (back) bacon - Lean2 slices tomato1/2 cups baby spinach raw1 Orowheat Sandwich Thin - Whole Grain1 Laughing Cow Cheese wedge
Directions
Poach one egg. I use silicone ring in non stick pan. Add 1/4 water in pan and plan a tblsp vinegar (I used rice vinegar). Heat to bubbling and place egg in ring. Sprinkle a dash of Celtic Sea Salt and fresh ground pepper.
While egg is cooking, spread 1/2 of the Laughing cow cheese wedge on each wheat thin half. Place spinach on lower bun and top with back bacon. Place poached egg on top of bacon and top with tomato slices. Sprinkle a dash of celtic sea salt and ground pepper on tomato and top with other sandwich thin half.
