Quinoa, Traditional, Organic 1 cup dry drizzle of EVOO2 cups broth (chicken or vegetable)Asparagus, fresh, approx. 15 spear, cut in 1" pieces Grape Tomatoes (3oz/12 tomatoes)quarteredBasil, 4 tbsp finely chopped*Extra Virgin Olive Oil, 4 tbsp or 1/4 cupGarlic, 1 tsp or 1 cloveCrushed Red Pepper, 0.25 tspSalt, 1 tspPepper, black, 1 tsp Chicken Breast (cooked)about 2 cups choppedParmesan Cheese, grated 1/4 cup
rinse quinoa in fine mesh strainer, pat dry. Drizzle small amount of olive oil in saucepan. Place quinoa in olive oil and slightly toast, or until water evaporates. Pour in 2 cups broth, bring to a boil. Boil for 5 minutes, cover and reduce heat to low, cook for another 15 minutes. Remove from heat for 5 minutes before fluffing with a fork. Add to remaining ingredients, and toss.
