Tomato & Onion Stuffed Avocados

2 Tbsp. Olive oil2 Avocados2 Garlic cloves minced1/2 cup Diced red onions2 slices Provolone cheese2 tbsp. finely chopped fresh basil1/4 cup halved cherry tomatoes
Preheat oven to 350 degrees.
Cut the avocados in half and remove the pits. Do not remove the peels.
Cook the onions and garlic in a pan with olive oil until they begin to caramelize.
Place onion and garlic in the space where the pit used to be. Add chopped basil and a few halved cherry tomatoes.
Top with provolone cheese.
Place in the oven for 15 minutes or until the cheese is melted.
