Maple Mustard Pork Tenderloin

1 1/2 lb pork tenderloin1/4 cup dijon mustard1/4 cup maple syrup (real syrup is best)1 TBSP chopped fresh rosemarysalt and pepper to taste
Preheat oven to 350. Prepare a baking sheet with tinfoil and spray lightly with cooking spray. Place pork on baking sheet and sprinkle with salt and pepper, and rub the spices into the meat. Mix mustard, syrup, rosemary, and additional salt and pepper in a bowl, and pour half over pork, then rub the sauce into the pork. Bake 1 - 1 1/2 hours or until pork is cooked to 170 degrees. Take out of oven and put foil tent over meat for 10 minutes. Serve with remaining sauce.
