Chicken Fried Cauliflower

1 small head Cauliflower, raw2 tsp. Olive Oil1 tbsp. Soy Sauce8 oz. Chicken Breast, no skin4 clove Garlic1/2 cup Onions, chopped1/2 cup Celery, diced1/2 cup Carrots, chopped1 cup Broccoli, chopped or dicedSalt to tasteBlack pepper to taste
-Grate Cauliflower using food processor, blender, or cheese grater.
-Dice/chop all other ingredients.
-Add oil to frying pan on medium heat.
-Add the onions and garlic to the pan and cook until translucent (about 8 min.).
-Add all ingredients EXCEPT THE CAULIFLOWER, SALT & PEPPER.
-Cook until the chicken is cooked through and the veggies are tender crisp.
-Add cauliflower and stir to combine.
-Cook an additional 3-4 minutes to heat cauliflower.
-Salt & Pepper to taste.
Serving Size: Makes about six one cup servings.
