Ingredients
24 corn tortillaslg can enchilada sauce24 oz extra lean ground turkey breast, cooked 24 oz lowfat string cheeseoil for frying1 cup shredded cheddar cheese
Directions
fry tortillas in hot oil. drain and pat dry. dip in sauce, place in 9x13 baking pan that has been pammed and top each tortilla with a light string cheese and an oz of cooked turkey roll up and top with remaining sauce. sprinkle with cheese and bake at 350 for 35 minutes until hot and cheese has melted.
