Cauliflower Chicken Sheppard's Pie

2 pounds boneless skinless chicken breast - cooked and cubed10 ounce bag of frozen mixed veggies1 can Chicken Gravy2 cups cauliflowerhalf cup non-fat milk1 Tbsp ButterSalt and Pepper to taste1 Cup Sharp Cheddar Cheese3 Tbsp Chopped Chives (optional)
In a 9 x 13 inch baking dish, combine chicken, frozen veggies, and gravy. Mix well and spread evenly in baking dish. Using your food processor, blend cooked cauliflower with milk and butter until smooth -- it will resemble mashed potatoes. Season with Salt and Pepper to taste. Spread cauliflower mixture evenly over the chicken and veggies. Top with cheddar cheese and bake for 35-40 minutes at 350 until piping hot and cheese is melted. Garnish with chopped chives.
