Zucchini Quinoa Patties

1 cup zucchini grated1 garlic clove grated (optional)1/2 tsp garlic powder1/2 tsp onion powderSalt & Pepper to taste (about 1/4 tsp each)2 eggs1 Tablespoon flour1 cup cooked quinoa1/2 cup grated parmesan cheese (green container kind)Oil for cooking.
Take half of a medium sized zucchini and grate it into a medium sized bowl. Grate or crush the garlic if you are adding it. Add rest of the ingredients and mix together with a fork. Meanwhile begin to heat a nonstick skillet and place a tablespoon of oil in it to heat up. Using tablespoon drop a generous heaping spoonfuls of the batter into the heated oil. Make sure to leave a little space between the patties so they can get brown. Each side takes about 2 minutes or so to brown then turn over and brown the other side. When you can see that then patty is cooked through with no visible egg moisture showing they are done. You may need to flip them a couple of times for even cooking.
