Easy Mexican Chicken and Black Beans

Ingredients
2 chicken breasts cut into strips1 package of taco seasoning1 can of corn, drained1 can of black beans, drained and rinsed*Optional* Whole wheat tortillas or brown rice
Directions
Cook chicken in skillet until it is almost cooked through. Prepare taco seasoning according to directions on package. Pour over chicken. Add beans and corn. Cook for about 10 minutes until chicken is thoroughly cooked. Serve in whole wheat tortillas or over brown rice. Also good plain!

    Great! Easy and delicious. I added brown rice...and it actually wasnt necessary at all. I will definitely make this again without rice and toss it over lettuce next time. Yum! - 9/4/11
