Bring water to boil and stir in quinoa. cover, reduce heat to low and simmer 15 minutes. Remove from heat and set aside for another 10 minutes, until liquid is absorbed.
Heat olive oil over medium heat and saute onion and bell pepper until tender. Mix in asparagus and ginger, cook until asparagus is tender. Season with salt and pepper to taste. Add in shrimp and cook 5 minutes or until shrimp pinkens up.
Mix the Quinoa with the lime juice and a dash of olive oil. Toss with sauteed mixture and serve.
