Thai Chicken Peanut Lettuce Wraps

Ingredients
2 boneless skinless chicken breasts1 chopped yellow pepper6 ounces of chopped carrots1 cup of chopped mushroom1 head of romaine lettuce1/4 of a cucumber slicedGarlic (optional)Peanut Sauce6 tbs of peanut butter1 tbs of oil2 tbs of soy sauce1 tbs of red wine vinegar1/4 cup of brown sugarSalt, Pepper, Cayenne (to taste)
Directions
Bake the chicken for 35 min at 350
Meanwhile...
Chop pepper, carrots, mushroom and cook in a wok on medium high heat
Once chicken is baked chop it into small pieces
Add chicken to the vegetables
Turn the heat to low and add in the sauce

Put 2 tablespoons of the thai chicken inside each whole lettuce piece and place thinly sliced cucumber on top
