fried breaded eggplant

Ingredients
beat egg with whisk and when add water to thin for wash. place flour on dish. place bread crumbs on dish. cut skin off eggplant, cut in very thin slices and soak in salted water for about 1 hour (helps to put bowl on top of eggplant to weigh it down. drain eggplant. dreg eggplant in flour, dip in egg mixture and then dreg in bread crumbs. Heat heavy frying pan and when hot add shortening. when melted and hot add eggplant slices and fry until golden, don't crowd. Cool on paper towel and lightly salt.
