Couscous, 1 cupGarlic, 1 tspWater, 1 cupParsley, dried, 1 tspSalt, 1 dashBlack pepper, 1 dashDiced Tomatoes, No Salt Added, 1 cupRed Bell Pepper, 1 cupBell pepper orange 1 cupExtra Virgin Olive Oil, 1 tbspDried minced onion, 0.5 tbsp
Boil the water, add couscous, garlic, and dried parsley. Stir together, cover, remove from heat and let sit for 10 minutes. Fluff with fork before serving.
In separate pan, saute the bell pepper strips in olive oil. Add diced tomatoes, salt, pepper, and minced onion. Simmer for about 10 minutes or until desired softness.
Service bell pepper mixture over couscous.
