Southern Ham & Egg Salad

Ingredients
1 1/2 cups chopped ham4 boiled eggs, chopped1 green onion, diced1 stalk celery, chopped (or can use pickle)2/3 cup mayonnaise1 teaspoon (or less) yellow mustard1/2 teaspoon (or more) Cajun seasoning1/4 teaspoon black pepper1 tablespoon dried parsley
Directions
Combine all ingredients in a medium bowl. Cover and refrigerate for at least an hour to allow all the flavors to meld.
