Tofu Fried Rice

Ingredients
1 lb extra firm tofu1 tbsp soy sauce1 tsp sesame oil1/4 to 1/2 cup cornstarch4 tbsp vegetable oil1 cup chopped onion2 tsp minced garlic1/4 cp crushed red pepper flakes8 oz broccoli slaw mix4 cups cooked white rice (cool)2 to 3 tbsp watersoy sauce for seasoning
Directions
drain tofu and slice in half horizontally. Cover in towels and place something heavy on top and let sit 10 minutes. Cut tofu into 1/2 inch squares. Place tofu in a bowl and drizzle with soy sauce and sesame oil, stir gently. Add corn starch and stir to coat all pieces.
Wok or large skillet on high heat, add 2 tbsp oil. When it's very hot, add onions. Cook 4 minutes, stirring a few times (want fairly brown). Add garlic, then add red pepper and broccoli slaw. Stir 2 minutes and remove from skillet.
Heat other 2 tbsp. Add tofu, brown all over. Crumble rice over tofu, then add slaw mix and water. Stir until rice softens and heats through. Then season as desired.

    I used peanut oil and added peanut sauce to the tofu mixture. Also used brown rice instead of white. Very good and a great vegan recipe! - 8/1/08
