Vinegar (red wine preferred) or lemon juice;1 shallot, finely minced;salt and pepper to taste;Extra Virgin Olive Oil
Directions
Shake in a jar or whisk until blended: vinegar or lemon juice, shallot, dijon mustard, salt & pepper.
Add in a slow stream, whisking constantly, or add to the jar and shake until smooth: Extra Virgin Olive Oil.
