Lemon Kale and Wheat Berry Salad

Ingredients
1 head kale, curly or dino1/2 cup wheat berries3 sprigs fresh thyme1/2 tsp. kosher salt3 tbsp olive oil1 tbsp maple syrup2 fl. oz lemon juice
Directions
Clean and tear kale into bite-size pieces, and massage with one tbsp. olive oil. Let rest for 30 minutes.

Cook wheat berries according to package instruction, with thyme and salt.

While wheat berries are cooking, whisk together the rest of the ingredients.

Mix kale, wheat berries, and dressing immediately after cooking. Let the kale wilt a little bit.

Very good with feta cheese and craisins! Stays good in the refrigerator for several days.
