1 Tbsp canola oil1 c chopped onions1/2 c chopped celery1 c chopped sweet red peppers1 c chopped sweet green peppers1 c chopped carrots1/2 c mushrooms, choppedI 13 oz can tomato paste1 28 oz can whole tomatoes, break up with your hands1 650 ml jar Classico tomato and basil pasta sauce1/2 c TVP (Texturized vegetable protein: looks like dried ground beef and adds some protein. Soy-based.)
Sauté onions and celery in oil. Stir in other veggies as you chop them then stir in seasonings. I use garlic powder, oregano, pepper and italian seasoning. Add canned tomatoes, broken up; stir in tomato paste and can of water and jarred sauce. Add tvp after soaking and rinsing it for a few minutes in warm water. Season, simmer for about 1 hour until carrots are fork- tender.
