Healthy Oatmeal Carrot Cake Pancakes

Ingredients
2 cup Rolled Oats0.5 cup flour0.5 tsp Salt Baking Powder, 3 tsp 1 cup Zero Fat Greek Vanilla Yogurt1 tsp Vanilla Extract2 tbsp Cinnamon, ground (or to taste)1 cup Egg White 2 cups Grated Carrots 1/3 cup raisins (optional)1 cup Water (more or less)
Directions
Grind oats in a blender or magic bullet until fine as flour. Mix dry ingredients together in a big bowl. Mix wet ingredients, except for water, together and then stir them together in the big bowl. Add water to thin it out to a good batter, but it will still be kind of lumpy (due to the carrots).

Heat a frying pan on medium. Spray the pan with cooking spray and measure out with 1/4 cup measuring cup. Cook on both sides until desired doneness.

Serving Size: About 20-24 pancakes depending on how much water you added.
