chunky home made chicken gravy

Ingredients
4 chicken thighs skinlessone raw white onion choppedone stalk celery choppedchopped mushrooms if desiredpoultry seasoningsoy saucesalt and peppercorn starch 3 - 4 tbs
Directions
skin the thighs and brown them in a little butter or oil, add the chopped celery and onions and mushrooms if desired. cover with water about 3 inches. add seasonings and cook till chicken is tender. remove chicken , remove the bones and add pulled chicken back into the pot. make a slurry of 3-4 tbs of corn starch and water and add to the pot. thicken or thin to desired consistancy.

Serving Size: makes enough gravy for at least 6 servings, or to be used in a casserole
