Quinoa sweet potato hash

1 3/4 c dry quinoa3 cups low sodium chicken stock3 tbsp olive oil1/2 red onion chopped1 clove garlic1 tspn ancho chili powder1 tspn ground coriander1/2 tspn ground cumin1 small red jalapeño pepper2 small sweet potatoes cubed1/3 cup roughly chopped cilantro1 tblsp fresh lime juice
Rinse quinoa in water (drain and repeat twice)
Drain and put into dry sauce pan till dry...abt 8 minutes
-add 1 1/2 cups chicken stock and cook on medium with cover slightly open for about 15 minutes
-in non stick sauté pan, 2 tblsp no.o. With the clove of garlic; crushed...(remove after oil begins to get warm)
-add onion, Jalapeño and potatoes and remaining chicken stock and cook for about 15 in mutes (until potatoes r soft)
-add to quinoa along with the lime juice and cilantro
