1lb boneless, skinless chicken breast (divided)3 tbsp extra virgin olive oil3 oz. white wine1 cup low sodium/fat chicken broth1.5 cups jarred marinara sauce4 oz. part skim mozzarella cheese
Lightly flour the chicken pieces. Heat olive oil over medium heat and add chicken. Cook chicken until browned on the both sides. Deglaze the pan with the white wine. Add broth and marinara sauce. Bring to boil and reduce to simmer until sauce thickens and chicken is cooked through (about 20 minutes).
