Honey Olive Oil Muffins

1C. yellow corn meal1C. all purpose flour1/3 C. sugar1 tbsp baking powder2 teaspoons lemon zest1 teaspoon salt1C. milk (I use 2%)2 large eggs plus 1 yolk1/4 C. honey1/4 C. EVOO
Preheat oven to 375 degrees and grease a 12 cup muffin tin; you can also use paper baking cups instead.
Whisk cornmeal, flour, sugar, baking powder, lemon zest and salt in bowl.
In another bowl whisk the milk, eggs, honey, and olive oil. Add the dry to the wet and stir just until mixed. Pour batter evenly into cups and bake 18-20 minutes.
Serving Size: Makes 20 muffins
