Chilli and lemon poached chicken

Ingredients
1 tomato in wedges1/2 cup cucumber1-2 red chillies sliced2 lemons sliced25gm sweet corn1 chicken breast sliced1 cup iceburge lettuce shredded 1 carrot in batons1/2 cup of Cheddar or colby low fat cheese diced
Directions
Step 1: slice and seed the chilli, slice the lemon ( leave about 2 slices of lemon out and put it in a bottle of cold water in the fridge to have with tea) and put them in a medium pot of water, than slice the chicken and put it in there. Bring to boil cook for 10 minutes.
Step 2: slice tHe cucumber, tomato, baton the carrots, dice the cheese and shred the lettuce. Mix together with the corn.
Step 3: serve and enjoy.
