Faux Potato Salad

1 large head of cauliflower2 hard boiled eggs4 scallions1 cup mayonnaise2 tbsp italian dressing ( I used one with 1 gram of carbs per 2 tbsps)Salt and pepper to taste
Put about 2 inches of water with about a tsp of salt in a pot large enough to steam the cauliflower in one layer. Cut cauliflower in large pieces, it won't get as wet that way. Steam for about 15 minutes or until fork tender but not too soft. Drain cauliflower and pat dry with paper towels when cool enough to handle. once dry, cut into chunks similar in size to what you would for regular potato salad. Hard boil the 2 eggs, cool and peel and chop into small pieces. Slice scallions into small pieces. put the cauliflower, eggs and scallions into large bowl. Add the mayonnaise and the italian dressing and mix well. Add salt and pepper to taste, I used about 1 1/2 tsp of salt. Refrigerate at least 2 hours for flavors to mix.
