Jicama and Watermelon Salad

Ingredients
1/2 cup fresh orange juice plus 1 tsp zest1/4 cup fresh lime juice plus 1 tsp zest2 tbsp honey1 tsp ground black pepper1 tsp kosher salt1 small jicama (1 cup) cut into matchstick pieces4 cups watermelon in 2 inch chunks1/3 cup roughly torn mint leaves
Directions
Whisk together juices, honey, pepper and salt in a large bowl. Add jicama, watermelon and mint. Toss to coat.

    Very good and refreshing. I have made it without dressing too-just added torn mint and it is sweet as it is with melon being so good right now.

    I cannot wait to make this version of Watermellon Salad. We traditionally us the mint, and mellon, but instead of Jicama, we add Feta and balsamic vinegar and olive oil.
