Ingredients
Olive Oil cooking Spray12 oz whole-wheat penne pasta1 lb extra lean ground turkey2 teaspoons olive oil1 cup onion chopped1 cup celery chopped1 cup carrots choppeddash saltdash black pepper1 cup low sodium beef bullion1/2 tbls balsamic vinegar1 28oz can crushed tomatoes2 tsp tomato paste2 bay leaf (remove before baking)6 tbls chopped fresh basil (reserve 1 for garnish and 3 for cheese topping)4 tbls Parmesean cheese8 oz low fat mozzarella cheese, shredded16 oz part skim ricotta
Directions
Cook pasta according to package instructions Reserve

In a large skillet, brown turkey with olive oil. Once browned add onion, celery and carrots, salt and pepper cook till veggies tender. Add garlic and remaining ingredients except cheese, simmer until think

Mix 3 cheeses with basil set aside

Mix meat sauce with pasta pour into 9/13 baking dish top with cheese mixture. Bake 30 minutes at 375
