Bourbon Banana Bread

1-3/4 cups flour1/4 tsp baking soda2 tsp baking powder1/2 tsp salt1/3 cup light butter substitute, softened4 egg whites1/3 cup sugar1/2 cup Splenda4 overripe bananas, mashed2 Tbsp bourbon1/2 tsp lemon juice1/2 cup semi-sweet chocolate chips1/2 cup pecans, chopped
1. Preheat oven to 350 degrees F. Coat a loaf pan with cooking spray and set aside.
2. In a medium sized bowl, combine flour, baking soda, baking powder and salt.
3. In a large bowl of a stand mixer, cream butter. Add egg whites, sugar, Splenda and mashed bananas. Beat on medium speed for 3 minutes. Add lemon juice and bourbon, beat additional 30 seconds.
4. Slowly add flour mixture and beat just until combined. Fold in chocolate chips and chopped pecans.
5. Pour into pan and bake 50 - 60 min or until a toothpick inserted in top center comes out clean. Loaf should spring back slightly to the touch.
6. Cool completely on wire rack, wrap in foil.
