Volumetrics Shrimp Fried Rice

1 lb. raw shrimp, peeled, deveined and tails removed2 tsp minced garlic1 tsp fresh ginger, minced3 tsp sesame oil, divided1 cup frozen peas, thawed1 cup broccoli florets1 cup chopped bell pepper, yellow, red or green1/2 cup chopped scallions1 cup chopped carrots1 cup chopped cabbage2 cups cooked brown rice1 Tbsp soy sauce, low sodium1 egg1 egg whitePinch cayenne pepper
Heat 1 tsp oil in a large wok. Add shrimp, garlic, and ginger. Cook three minutes or until shrimp are pink and opaque. Remove shrimp from skillet and keep warm.
Add remaining oil. Combine vegetables and cook for three minutes. Stir in rice, shrimp, and soy sauce. Cook three minutes more or until mixture is heated through.
In a small bowl, whisk together egg and egg white. Pour egg over rice mixture and stir to combine. Cook until egg is set, about three minutes.
Sprinkle with cayenne pepper and serve.
Serving Size: Makes 4 1.5-cup servings.
