Broccoli, Corn and Cashew Stir-Fry

1 ear fresh corn, husks removed1 (˝-inch) piece fresh ginger, minced1 clove garlic, minced2 tablespoons olive oil, divided1 (12-oz) package fresh broccoli florets1 teaspoon sesame oil1 tablespoon low-sodium soy sauce1/4 cup cashews, toasted1 tablespoon chopped fresh basil
Cut kernels from corn. Sauté ginger and
garlic in hot olive oil in a large nonstick skillet
over medium-high heat 1 minute. Stir in
broccoli, corn kernels and sesame oil; sauté 5
minutes or until vegetables are crisp-tender.
Add soy sauce, and toss well; stir in toasted
cashews. Serve stir-fry over Green Onion
Jasmine Rice; sprinkle with basil just before
serving.
