Red Pepper Mango Thai Soup with Peanuts

Ingredients
1 red onion, chopped1 big clove of garlic, finely chopped1 tbsp coconut oil2 big red bell peppers (300g), chopped1 medium carrot, chopped2 tbsp red Thai curry paste (mild)1 cup/250ml water100g ripe mango, diced + more for garnish100ml unsweetened soy milk or coconut milk100g roasted salted peanuts or peanut butter + more for garnishsalt to taste
Directions
Sautée onion and garlic in coconut oil till the onion has softened a little. Add chopped pepper, carrot and curry paste and stir. Add water and let simmer for 10min.
Then add mango, soymilk and peanuts or peanut butter. Stir and blend everything in a high speed blender until smooth. Season with salt and serve.
Garnish with Mango pieces and peanuts if you like and enjoy!
