Catlovers MF Potato Pancakes

Ingredients
1 package MF Sour Cream and Chives Mashed Potatoes (dry mix)1/2 cup water1 whole egg1 TBL fresh chives or 2 tsp dried chives2 TBL reduced fat sour cream (I use Breakstones)
Directions
Combine dry mix of MF sour cream and chive mashed potatoes, chives, 1/2 cup cold water and 1 whole egg. Mix well. Allow to sit on counter for about 5 minutes to thicken.
Meanwhile, preheat a PAM-sprayed skillet over medium-high heat.
Spoon the potato mixture gently into the pan to form pancakes...they should cook quickly...when they start to bubble and look down on the edges, turn them. Watch carefully...second side cooks even faster. You should have enough batter to do this about 2-3 times for a total of about 7 pancakes.
Serve with the 2 TBL reduced fat sour cream.
This equals 1 MF meal plus 1/4 (approx.) lean plus 1 condiment. ENJOY!
